About Shun Classic: Shun, a brand designed to savor and enjoy the changing seasons in more diverse ways. The 33-layer structure, created by layering stainless steels of different hardness, creates a beautiful Damascus pattern on the surface, resembling wood grain. By adopting Kai's long-cultivated -sharpening technology and using high-hardness, high-carbon VG-MAX material as the core, this maintains its sharp cutting edge for a long time. The D-shaped handle made of laminated reinforced wood, finished beautifully without rivets, fits comfortably in your hand. The Shun tool, pursuing functional beauty, is not just for the kitchen but also a display piece on the dining table, adding color to your new life.

Professionally sharpened and restored using 400→1000 grit whetstones, followed by Bester 3000 grit, Otani whetstone 6000 grit, and finished with Morihei Karasu 9000 grit.

Excellent sharpness.
